Liguria

Liguria is an oldschool Italian pyriform sauce tomato with pleating showing its ancient central american ancestry. The deep red flesh is thick and has perfect texture. The flavor is everything you would expect from an old sauce type, not sweet but very tomatoey. The skins are thin enough to include when cooking, and the seeds are sparse, especially for an old pleated type. Not being very drought tolerant, the plants are hardy in other ways, including being able to handle a reasonable amount of heat and having decent blight tolerance for such an old type. The namesake of this tomato comes from its place of origin, Liguria has become famous for their fantastic tomatoes.
